Ingredients

4 tablespoons sugar
1/2 cup vegetable shortening
2 eggs
1 teaspoon baking soda
1/4 cup milk
2 cups flour
2 cups whole wheat flour
1/2 cup seeded raisins
1/2 teaspoon salt
11/2 cups molasses
1/2 cup chopped nut meats
1 teaspoon powdered ginger
1/2 teaspoon powdered mace
1 teaspoon powdered cinnamon
3 tablespoons chopped candied lemon peel

Procedure

  1. Mix flours. Add peel, raisins, nuts, spices, and salt.
  2. Melt vegetable shortening, molasses, and sugar.
  3. Cool and add well-beaten eggs.
  4. Mix soda with milk and add to molasses mixture.
  5. Mix well and pour into greased and floured cake tin.
  6. Bake at 350 degrees for one hour.
  7. Sufficient for one large cake of gingerbread.
