Pumpkin Harvest Bars

Ingredients

1 3/4 cup all purpose flour
2 tsp. baking powder
1 tsp. grated orange peel
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground cloves
3/4 cup sugar
1/2 cup applesauce
1/2 cup solid pack pumpkin
1 egg
1 egg white
2 Tbsp. vegetable oil
1/2 cup raisins

Procedure

1. Preheat oven to 350*F. Spray 9×13 inch baking pan with nonstick spray.

2. In small bowl, combine flour, baking powder, orange peel, cinnamon, salt, nutmeg, ginger and cloves.

3. In large bowl, combine sugar, applesauce, pumpkin, egg and egg white, and oil.

4. Add flour mixture to applesauce mixture; stir until well blended. Stir in raisins. Spread in prepared pan.

5. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes then cut into 16 bars.
