Queen of Puddings

Ingredients

3 large eggs
6 heaped tbsp rusk crumbs
4 level tbsp sugar 1 tbsp desi ghee
1 level tsp baking powder
1/2 tsp vanilla essence
1/4 cup walnuts (broken into small pieces)
1/4 cup raisins (kismish)
4-5 glaced cherries
a small piece of lemon peel, cut into
tiny bits
1 cup hot milk

Ingredients for the apple custard sauce
1/2 kg milk (2 1/2 cups)
1 heaped tbsp custard powder
3 tbsp sugar
1 apple

Procedure

1. Grease a baking tin of 6"-7" diameter.
2. Arrange peels, walnuts, raisins & cherries in the tin so that they cover the base of the baking tin.
3. Beat egg whites in a dry pan till stiff.
4. Mix in egg yolks and beat again.
5. Add crumbs, sugar, ghee, baking powder and vanilla essence. Beat well.
6. The mixture is of thick pouring consistency. Pour gently over the arranged walnuts etc.
7. Bake in a preheated oven for 25-30 minutes at 200°C.
8. When baked, remove from the tin to a serving plate.
9. Soak the pudding with 1 cup of hot milk to make it extra soft. Keep in the fridge.
10. Serve along with apple custard sauce kept in a milk-pot.

Method to make apple custard sauce
1. Dissolve custard powder in 1/2 cup of cold milk. Cut apples into small cubes.
2. Heat 2 cups of milk with sugar.
3. When itboils, add apple pieces and custard powder, stirring continuously.
4. Cook for 2-3 minutes till custard is si ightly thick. Cool it before serving.
