Vanilla Mousse

Ingredients

1 apple
2 eggs (large)
2 tsp vanilla essence.
200 gms cream (fresh)
2 tsp heaped gelatine (1 small packet)
1 cup powder sugar (100 gms)
3 tsp lemon juice
1 1/4 cup water (200mls)

Procedure

1. Mix gelatine in 1/2 cup water. Heat on slow fire to dissolve it.
2. Beat egg yolks with sugar in a pan till creamy.
3. Grate apple with peel and sprinkle lemon juice over it.
4. To the yolks add grated apple, 1 1/4 cup water & gelatine solution. Mix well.
5. Chill in the freezer till the mixture is thick.
6. Beat well. Add essence and cream.
7. Add stiffly beaten eggwhites.
8. Mix well. Chill in the freezer till set. When set, remove from the freezer.
