Karen's Broccoli-Corn Casserole Recipe

Ingredients

1 pkg (10 oz) frozen chopped broccoli
2 can creamed corn; 15.25 oz
3 cup herb-seasoned stuffing mix; divided
1 can creamy onion soup; undiluted
8 oz sour cream
3 tablespoon margarine; melted
2 large eggs; beaten
1 cup (or less) shredded cheddar cheese,; sharp or mild

Procedure

Cook broccoli according to package directions, omitting salt. Drain well. Combine broccoli, creamed corn, 2 cups stuffing mix, soup, sour cream, margarine, and eggs. Mix well. Spoon into lightly greased 2-1/2 qt. casserole or baking dish. Sprinkle with cheese and remaining cup of stuffing mix. Bake at 350 degrees for 30-40 minutes or until heated thoroughly.
