Cracker 'n Vegetable Lasagna Recipe

Ingredients

1 medium red bell pepper; cut in strips
1 small onion; sliced
1 small zucchini; sliced
1/2 teaspoon oregano leaves
1 tablespoon fleischman's margarine
32 premium saltine crackers; any kind
4 oz reduced fat cheddar cheese; shredded
2 cup skim milk
1 cup egg beaters 99% egg substitute

Procedure

In large skillet, over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese. Repeat layers, ending with cheese.

In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at 350 for 30 to 35 minutes or until knife inserted in center comes out clean.
