Mike's Mom's (Shirley) 7-Layer Casserole RecipeAdded On: Friday, September 28, 2007 | In Casserole Recipes Rated by 1 users

Ingredients1 cup uncooked white rice 1 cup frozen whole kernel corn 2 can 8 oz tomato sauce 1/2 cup diced onion 1/2 cup diced green bell pepper 1 lb lean ground beef 4 slice bacon 1 salt and pepperProcedurePlace ingredients in 2 quart baking dish in this order:
1. Rice
2. Corn
3. Salt and pepper to taste.
4. 1 of the 8 oz cans of tomato sauce and 1/2 can water.
5. The half cup of onion and the half cup of bell pepper.
6. Ground beef.
7. Some more salt and pepper to taste.
8. The last can of tomato sauce with 1/4 can of water.
9. Cut the bacon in half and use to cover the casserole.
Cover the dish, bake at 350 F for 1 hour. Then uncover and bake for about 30 minutes more until bacon is crisp.
This was one of my mother's best endeavor's when I was a growing young man. Mom was kind enough to share the recipe with my bride of almost 25 years. And it is still one of my favorites when Barb is in the casserole mood. Hope you all enjoy, should you give it a try. casserole
