Whiting Aux Fines Herbes (english) Recipe

Procedure

  1. Clean and skin the fish well and fasten it with its tail in its mouth.
  2. Place it on a dish, season with pepper and salt, and sprinkle over it a teaspoon of mixed sweet herbs in powder.
  3. Lay little pieces of butter here and there thickly upon it, cover with another dish, and bake in a moderately heated oven until done enough.
  4. Turn it once or twice that it may be equally cooked, and serve with the sauce poured over it.
  5. Time to bake the fish, twenty or thirty minutes.
  6. One fish for each person.
