Ingredients

4 sweet potatoes, peeled, quartered
10 figs
2 cups milk, scalded
3 eggs
1/2 cup sugar

Procedure

  1. Boil sweet potatoes and figs in salted water for about 25 to 30 minutes.
  2. Drain off water.
  3. Pass potatoes and figs through meat chopper.
  4. Mix together the eggs, sugar, and milk.
  5. Add this mixture slowly to the potato and fig pulp.
  6. Pour into a pudding dish.
  7. Set pudding dish in a pan of hot water.
  8. Bake at 350 degrees for about 25 minutes.
